How To Make Standard Cut French Fries
ingredients:
3-4 Large Russet Potatoes.
Kosher Salt/ Sea Salt .(whatever salt you want to use is cool)
2-3 Quarts of Peanut Oil.
How to Prepare your Potatoes
Cut your Potatoes length ways into even 1/4 inch x 1/4 inch thick rectangle sticks try to keep them relatively the same size so they cook evenly.
The next step is to take all of your 1/4x1/4" potato sticks that you just cut and let them soak in cold water for 15-20 minutes. After the 15-20 minute mark make sure to drain the water that your potato sticks are in and repeat the soaking process a total of 2-3 times.
After you have soaked and rinsed your potatoes 2-3 times the third step is to make sure to line the potato sticks onto a baking sheet or counter top that is lined with paper towels or a cotton cloth to let them dry. Make sure that your potato sticks are not bunched together during this step and be sure they are evenly spaced apart. Pat your potato sticks dry with more paper towels or another cotton cloth.

Frying Your Potatoes
Heat 2-3 quarts of peanut oil to 330 degrees Fahrenheit using medium heat in a large pot that can hold double the amount of oil that you plan to use while frying your potatoes. (as stated above 2-3 quarts of peanut oil should be fine)
Using a deep fry thermometer check your oil temperature periodically and once your oil reaches 330 degrees Fahrenheit you can start adding a 1/4 to a 1/3 of your potatoes that you prepped before hand to the hot oil.
Once your potatoes are cooking in your heated oil let them cook for 2-3 minutes. Be sure to stir your potatoes in the oil with a wooden spoon and keep an eye on the color of the potatoes and also the tenderness of the potatoes. Do not let your potatoes brown during the first frying session, you want them to be a light color and slightly crispy. you will know they are finished with the first frying session when they are the above mentioned color and you are able to cut into them with your stirring spoon.
Next you will need to line a baking sheet with paper towels and remove your potatoes from the fryer oil placing them onto the paper towel lined baking sheet in a nice single layer to remove any excess oil on the fries.
Repeat steps 1-4 of frying your potatoes for the remaining potatoes that need fried.
The last step is to heat your oil to 360 degrees Fahrenheit. Once your oil is heated to 360 degrees Fahrenheit you can start adding your potatoes again 1/4-1/3 of them into the pot at a time once again stirring them and watching carefully but this time watch for a shift in color. The potatoes should change from their light slightly crispy color to a golden brown crispier version. Repeat the 360 degree frying process to all potatoes.
After you have fried your potatoes at 360 degrees Fahrenheit and they have reached the golden brown stage remove them from the pot and line them on a baking sheet with fresh paper towels.
The next step is to take your salt and add however much salt you desire to your hot and fresh fries. Fries are best served immediately after frying and adding salt.
